  • Bananas: Overripe bananas work best. They should have multiple black spots on them but shouldn’t be too mushy. The more ripe the bananas, the sweeter the bread.
  • Butter: You can use vegan or regular butter.
  • Sugar: This recipe uses a combination of brown and white sugar. You can replace the sugar with coconut sugar, if desired.
  • Eggs: Instead of egg you can make a flax egg with ground flaxseed. Combine 1 tablespoon flaxseed with 2 1/2 tablespoons of water. Mix the flaxseed and water together to make a “flax egg.”
  • Vanilla Extract: Adds flavor. You can also add 1 teaspoon of cinnamon for more flavor.
  • All Purpose Flour: You can use gluten free 1-1 all purpose flour.
  • Leavening agent: This recipe uses a combination of baking soda and baking powder. Use fresh ingredients for the best results.
  • Chocolate Chips: Use your favorite brand of semi-sweet chocolate chips. You can also use milk chocolate chips but the bread will be sweeter.
  • Kosher salt

Tips for Making Vegan Banana Bread

  1. To bake the bread in a muffin tin, fill each muffin cup 3/4 full. Bake in an oven at 350 degrees for 18 to 20 minutes.
  2. Add nuts. You can add walnuts or pecans for additional crunch and flavor.
  3. If you only have 3 bananas, you can replace one banana with 1/2 cup applesauce.
  4. If your oven is heated to the correct temperature (350 degrees F), it should not take longer than 60 minutes to bake the bread. Check your oven temp if you bread is not cooked through after one hour.
